Tomato and grilled onion Bruschetta

  • 4 country-style bread slices
  • 20 cherry tomatoes
  • 4 spring onions (white)
  • 1/4 zucchini
  • 1 garlic clove
  • 2 fresh basil stems, plucked
  • 2 tbsp or 30 ml pesto
  • 1 tbsp balsamic vinegar
  • Olive oil
  • Salt and pepper



1. Heat up the plancha to a fairly hot temperature.
2. Cut the tomatoes into wedges. Cut the onions into halves, then slice them thinly. Cut the zucchini into small dices. Peel the garlic and mince it finely.
3. Brush the bread slices with olive oil and brown them on the plancha, then spread pesto on them.
4. Pour a drizzle of oil on the plancha, place the onions and the garlic, stir and sauté until the onions appear translucent.
5. Add the tomatoes and zucchini and sauté quickly : the tomatoes must not fall apart. Sprinkle with a drizzle of balsamic vinegar, season with salt and pepper and mix. Pick up the mixture and spread on the bread slices.
6. Sprinkle with basil leaves, drizzle with olive oil and enjoy immediately !
