Sausage Burritos

INGREDIENTS

  • 4 italian sausages
  • 1 diced red bell pepper
  • 1 diced red oinion
  • 4 tbsp or 60 ml olive oil
  • 2 tbsp or 30 ml tomato paste
  • 1 tbsp or 15 ml Chili powder
  • 2 cups or 500 ml pre-cooked rice
  • 4 large tortillas
  • 1 cup or 150 gr grated marble cheddar cheese
  • 2 tbsp or 60 ml mayonnaise
  • ½ bunch fresh cilantro
  • 1 lime cut into wedges
  • 1/2 cup or 120 ml sour cream

INSTRUCTIONS 

1. Remove the sausage meat from the sausage casing. On the plancha, medium heat, spread the sausage meat and cook it. Add the diced red bell pepper and the diced red onion. Stir, add a drizzle of olive oil and let cook 5 mns.

2. Add the tomato paste, stir well. Add the chili powder. Stir again.

3. Add the precooked rice and stir again, crushing the rice on the griddle. Set aside on a side of the plancha.

4. On the plancha, medium heat, place a tortilla. In the middle of the tortilla, place some grated marble cheddar cheese, and a drizzle of mayonnaise. Sprinkle with a few coriander leaves. Place some of the rice/sausage mixture on the top.

5. Fold the tortilla’s bottom in, towards the centre. Roll from side to side, to seal in the fillings.

6. Place in a plate, with a spoonful of sour cream and a wedge of lime. Enjoy !
