Chow Mein Tacos a la plancha

A Danny St Pierre recipe

For 8 small tacos 

INGREDIENTS 

  • 500 gr Chow Mein noodles
  • 2 cups or 500 ml bean sprouts
  • 1 red onion
  • 1 red bell pepper
  • 4 fresh sausages
  • 200 gr shrimps
  • 4/5 cup or 200 ml vegetable oil

  • 4 tbsp or 60 ml soy sauce
  • 2 tbsp or 30ml oyster sauce
  • 2 tbsp or 30 ml rice vinegar
  • 1/2 cup or 120 ml water
  • 2 tbsp or 30ml sugar
  • 1 tsp or 5 ml cornstarch

  • 2 small bird's eye chili
  • 2 green onion sprigs
  • 2 limes

INSTRUCTIONS

  1. Heat up the plancha to a medium to high heat on a side, low heat on the other side.
  2. On the medium/high heat side, place a pot of water until it boils. Add the noodles and cook al dente. Drain, oil and let cool on a plate.
  3. Mix all the sauce ingredients and set aside.
  4. Cut the vegetables into thin strips, remove the sausage meat from the casing and crumble. On the medium to high heat side, sauté the sausage meat and the vegetables while stirring well for 2 minutes, then lower the heat
  5. Deglaze with the sauce, stir and set aside in a bowl.
  6. Clean the plancha.
  7. Place 8 small noodle nests on the plancha, each one the size of a small taco, and let them crisp. Place the vegetable mixture, fold the noodle taco in half, press, then flip them, until both sides are brown.
  8. Serve with a lime wedge and add small bird’s eye chili to taste.
